Chicken Joon (Fesenjan)

INGREDIENTS

  • 6 to 8 pieces of skinless chicken pieces
  • 1 medium onion, grated
  • 2 tablespoon vegetable oil
  • 1/2 cup raw walnuts
  • 1/2 cup Joon Pomegranate Sauce
  • salt and pepper to taste
  • 2 tablespoon sugar or honey (optional but recommended)
  • Pomegranate seeds for garnish (optional)
  • 1/2 to 3/4 cup cold water

INSTRUCTIONS

  1. Season the chicken pieces with salt and pepper
  2. Grind the walnuts in a food processor to a smooth consistency.
  3. Sauté the grated onion in a pan with vegetable oil till soft and translucent
  4. Add the chicken pieces to the pan and cook with the onion for 3-4 minutes on each side
  5. Add Joon Pomegranate Sauce and the ground walnuts to the pan and mix well
  6. Add ½ cup water as needed and bring the stew to simmer
  7. Cover and continue to cook until the chicken is fully cooked and the stew is thick
  8. A sweetener, such as sugar or honey, can be added for extra flavor
  9. Sprinkle with pomegranate seeds before serving for garnish
  10. Serve over steamed rice
