INGREDIENTS
- 2 oz aged high quality tequila or alternatively use gin
- 1 jar Joon saffron honey (1.5 oz) for syrup
- 1/4 cup hot water for syrup
- 1 additional jar of Joon saffron honey for ice cubes
- 1/4 cup hot water for honey syrup for ice tray
- 1 cup water to fill ice tray
- Cocktail bitters, few dashes
- 1 fresh lemon, juice and peel
INSTRUCTIONS
- Make a simple syrup with the first jar of the saffron honey by mixing it with 1/4 cup hot water
- Add to it the additional cup of water and fill ice trays to make honey ice cubes. Small lemon peels can be added to each ice cube before freezing. This step can be done in advance.
- Repeat by mixing the 2nd jar of Joon honey with 1/4 cup hot water for simple honey syrup to be used for the cocktail—let it cool. Also can be done in advance.
- To make the cocktail in a shaker pour 2oz of gin or tequila plus 1 oz of Joon honey syrup, juice of 1/2 lemon and shake.
- Place honey ice cubes in the serving glass.
- Strain the saffron honey bees knees into the glass.
- Add 1-2 dashes of bitters.
- Garnish with lemon peel.
